‘Apple Pie’ Quinoa

Apparently 2013 was the year of quinoa and like most trends, it arrived late in India and is yet to leave. But with good reason! Rice is a huge part of our meals, especially in the south, so when I started altering my diet, I found that quinoa was a great alternative to rice. A cup of quinoa will give you twice the protein and 5g more fiber than a cup of rice. `

This recipe has nothing to with rice and everything to do with my obsession with cinnamon and apples.

I’m not a big fan of sweet breakfasts but this is one of the few I do enjoy. The chocolate swirls were added for visual appeal but I actually ended up liking how it tasted! While chocolate is a great addition to most sweet breakfasts, it’s not a habit I can keep up. My healthy addition to this would be a handful of crushed walnuts.

Quinoa Apples

‘Apple Pie’ Quinoa

A sweet protein packed breakfast bowl that will remind you of a dessert classic!

Ingredients
  

For the Quinoa

  • 1/4 cup Quinoa
  • 1/2 cup cup Water
  • 1/2 tbsp Brown Sugar
  • 1/4 tsp Cinnamon

For the Apples

  • 1 no Apple Peeled (optional) and diced
  • 1/2 tbsp Oil
  • 1/2 tbsp Sugar Alter based on sweetness of apple
  • 1/4 tsp Cinnamon
  • 1/2 tbsp Water

Instructions
 

To cook the Quinoa

  • Wash the Quinoa until the water runs clear. 
  • Add the washed Quinoa to a pot with the water, brown sugar and cinnamon and bring to a boil.
  • Once it starts to boil, turn the heat down to low, cover and cook until the water has evaporated and the Quinoa is cooked.

Continue

  • While the Quinoa is cooking, peel and dice the apple*
  • Add the oil to a pan and once it’s hot, add the apples.
  • Cook down with Caster sugar and a little bit of water**
  • Add cinnamon to the apples.
  • Once the apples are cooked add the quinoa to the pan and mix well. 
  • Serve hot or cold.

Notes

*While you can definitely make this without peeling the apple, I’m not too fond of the texture of the skin once it’s been cooked. It does, however make for good pictures! 
**Depending on the sweetness of the apples and the sweetness you prefer, you can either add more sugar or no sugar at all.
